The vision of CMSE came to me during a lull in the action at a baseball game.

I had done many things in my career, and recently, I was running the market and conceiving and producing fun events at another Colorado Springs restaurant. It was fun, but I wanted MORE. I wanted to follow my own dreams but WHAT SHOULD I DO?

In the crack of a bat, it all became clear: Baseball is the American pastime and what's a ballgame without a hotdog?  And what do you put on a hotdog?

MUSTARD, of course.

Retired players sometimes develop and sell their own distinctive mustards. Ballparks sometimes have a special mustard, and mustard is EVERYWHERE!

After a bit more research, I learned that every country makes its own mustard and there are THOUSANDS of varieties available from all over the world.

But one cannot live selling only mustard.  I decided to create the BEST SANDWICHES in Colorado Springs with new takes on old favorites, new flavor combinations, breakfast sandwiches and limited-time seasonal sandwiches.

I partnered with BOAR'S HEAD for my meats and cheeses, a local artisan bread baker for my bread, other local companies and the freshest produce and ingredients.

I found a GREAT west-side location in 2019 and started building.  Little did I know that 2020 would bring a GLOBAL PANDEMIC.   We opened in July 2020 and limped along with masks, sanitizer, and limited service for a while, but after FIVE YEARS, we've become a very popular destination for local fans and tourists alike!

We couldn't have done it without our fantastic CREW and everyone that keeps  coming back for the BEST SANDWICHES in TOWN.
